Coconut Chocolate Chip Oat Muffins



These are soooo yummy hot out of the oven.  This has now become my favorite muffin recipe!

Coconut Chocolate Chip Oat Muffins

1 cup whole wheat pastry flour
2/3 cup oat flour (ground up rolled oats)
1/3 cup rolled oats
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 large egg
1/2 cup honey
3/4 cup coconut Greek Yogurt (I used Chobani)
   ----or----
    1 tsp coconut extract + 3/4 cup plain Greek yogurt
1 tsp vanilla extract
1/3 cup coconut milk
1 cup semi sweet or dark chocolate chips
1/2 cup shredded coconut (for topping)
Coconut oil cooking spray

1.  Preheat oven to 425*F.   Spray muffin pan with coconut oil spray (I used a mini silicone muffin pan).
2.  In large bowl, mix flours, oats, baking soda, baking powder, and salt.
3.  In bowl of mixer, mix egg with honey.  Add yogurt and beat until combined.  Add vanilla and combine.
4.  Add flour mixture and coconut milk to sugar mixture, alternating between the two until combined.
5.  Gently fold in chocolate chips.
6. Add mixture to muffin tin, almost filling each cup.
7. Sprinkle with coconut.
8.  For mini-muffins, bake for 14 minutes or until lightly browned.  For regular muffins, bake 16-20 minutes.

Where have I been?

Ha!  It has been some time since I've blogged and I totally pooped out on the Pinterest Fitness posts.  For those of you who were following that, sorry about that!   Perhaps I shouldn't have committed to posting that while on vacation!  Despite that, I did run on my vacation, and did some workouts from Pinterest.

My 10k went well, considering I fell at about mile 2.  I was running down hill and my leg sometimes likes to stop working when going down hill.  I land on my toosh and my hands, got up quickly, and was on my way.  Quite a bit of the race was uphill and at an elevation of 5,000 feet.  So, considering all that, I came in at 59:18.  Not bad.  I definitely want to improve on that, though!

Since the 10K and our return home from vacation, I have run, but haven't enjoyed that so much because it gets hot really early.  So, I'm taking it indoors and doing the workout I won from the before/after photo contest.

With the 10K behind me, I want to set some new goals.  Goals are so important when it comes to staying fit.  I need something to work towards.  I need a challenge.  Here are some of my new goals for the summer:

1.)  Be able to do 20 pull-ups.  Unassisted.  I'm up to 5 right now.
2.)  Build up my core muscles.  Hold a forearm plank for 3 minutes.  I'm up to 1:30.
3.)  Complete the "Busy Mom Gets Fit" workout series and as a result, stay toned!  I'm in the second week of that.
4.)  Keep running twice a week!  (Haven't been too good with this one!)

Pinterest Fitness Day 11: Runner's Strengthening Workout


The other morning I passed an older gentleman on my run.  He is usually out walking when I am running.  He yelled to me, "How many miles?"  I replied "Five this morning!"  He shouted as I passed him, "I used to do that too.  And then my knee went out."  I was sad for him, of course, but this short conversation all the more verified my need to keep up with my weight lifting, resistance, and strength routines. 

There are many workouts on Pinterest for runners.  I picked this one in particular because I liked how the creator of this workout, found HERE, covered all the bases.  I did this workout after a warm up of jumping jacks and high knees, three times through and it took me about 45 minutes.  I was such a great total body workout!  I don't have a pull up bar (which I REALLY want), so I did leg raises on my ball.  That was more challenging than just doing them laying down.  Instead of pull ups on the bar I did an alternative.  Like I said, I really, really want a pull up bar!  :)  Below is a good video that explains how to do exercises if you don't have a pull up bar.

This was a good, challenging workout and I look forward to trying out the plethora of workouts for runners on Pinterest!  Plethora.  I really do like that word.


Exercise Ball Leg Raises.  Sit on ball.  Roll ball to the small of back.  Plant palms of hands on ground, fingers facing out.  Find your balance.  Lift legs to make your body straight.  Start from this position and lift legs up and back down.

Supreme 90 Day Wrap-Up

I finally finished my Supreme 90 Day* workout program!  It took me more like 135 days, but whose counting anyway?  I lost 16 pounds and a whole lot of inches (see below).  I went from a size 11 to a size 3.  After 6 1/2 years of marriage and three kids, my wedding dress is TOO BIG!!! I have NEVER been this strong in my life!  I can do pushups...REAL pushups!  I am definitely going to do this program again, just after I finish the Jillian Michaels' 30 Day shred.  Although, I hope it doesn't take me 135 days the next time around.  I hear my bathing suit calling my name for the summer!  Here are the results in inches:

Before/After/Total Lost
Chest:  34.5" / 31.75" / 2.75"Waist:  32" / 28.25" / 3.75"
Navel: 36" / 30.75" / 5.25"
Hips:  38" / 33.75" / 4.25"
Arms:  11.5" / 10" / 1.5" (in each arm)
Thighs:  17.25" / 14.75" / 2.5" (in each thigh)
Calves:  13.5" / 12.5" / 1" (in each calf)
Total inches lost:  26" all over!!!

Before: 185 lbs                  After: 128 lbs
To top it all off, this final stint of my weight loss is the final chapter in loosing my baby weight.  Above are my "before/after" photos.  In the before photo, I was 185 lbs after my first child.  In the after photo, I was 128 lbs 9 months after having my third child.  I've lost 58 lbs!  Here is to staying healthy and KEEPING IT OFF!!!!

*You can buy Supreme 90 Day at Walmart, Bed Bath & Beyond, Walgreens, or Amazon.com for around 20 bucks.  I saw it around Christmas time at Bed Bath & Beyond for 10.  Definitely worth the money!


Update June 2015:  This workout system is honestly the best I've tried, and I've tried a lot of the most popular (Insanity, 21 Day Fix, Jillian Michaels, BBL to name a few!).  After over three years of finishing this system for the first time, I always come back to these workouts.  They are the most effective for me!  If you want an amazing workout system that you will keep going back to, please click on the link below!  It is no longer available in stores!  Amazon seems to be one of the only ones carrying this GEM of a workout system.

Supreme 90 Day Update

Happiness is the feeling I got today when I fit into the dress that first caught Troy's eye before we dated...and that is after 3 kids! Since I started this program I have gone from a size 11/12 to a size 4/5! I'm on day 63, so here's to the next 27 days!
